As it’s cold outside the kettle can’t maintain a vigorous boil with the left off. it needs to be put on cocked.
Trust your sums. I’d only planned to boil for 30 minutes but there was too much flour so I boiled for an extra 30 and then there wasn’t enough (hence the aNB being higher than planned despite the lower OG
The OG is too low as I forgot the 20 minute dough in! It really makes a difference.
