Lessons

  • If I double mash in equal amounts then I can get away with 20l of liquor at start
  • Dough in at 65, leave to rest for 10 minutes before starting sparge.
  • Use top plate and lid
  • stop every 20 minutes for a stir
  • mash for full hour
  • mash out at 75, with extra litre of 75C water for rinsing.
  • let drain slowly then squash every last drop out with top plate.
  • Extra water can be added, just boil until correct volume achieved. 180 minute boil got me correct volume and efficiency.
