Lessons

  • The correct ABV hides a collection of errors.
  • An attempt to improve mash efficiency had the opposite effect – dough in makes too many unfermentables.
  • The brew was also had 40% excess ingredients due to a calculation error, so I had to make 40% more beer than expected to maintain the ABV
  • Rather that dough in, let soak at 65C for 10 minutes before starting the hour long sparge.
  • To raise mash efficiency, leave the lid on but give it a good stir every 20 minutes. Don’t bother with the top plate but keep the pump sparging
